Low Carb Protein Waffles

I mean, come on. Who doesn’t love waffles? They’re glorious!

The problem is most of the waffle mixes sold in stores aren’t very macro-friendly. But that’s okay. We’ll just have to take charge of this situation and come up with our own waffle mix!

So without further adieu, here’s the recipe for low carb, high protein waffles:

Ingredients

  • 1 scoop whey protein (any flavor!)
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 large egg
  • Water or almond milk

Instructions

  1. Preheat waffle maker
  2. Add dry ingredients to a bowl and mix
  3. Whisk in egg
  4. Add water or milk and mix until desired consistency is reached (all whey protein powders absorb a bit differently!)
  5. Cook for about 1 minute in the waffle maker and serve immediately

Macro Profile

Serving size: 1 delicious, big-ass waffle!

  • Protein: 31 g
  • Carbohydrates: 5 g
  • Fat: 5 g

This is just for the waffle (with no toppings). These macros will vary a little, depending on which protein powder you use, whether you use water or almond milk, and what toppings you add.

That’s right–toppings! Keeping the waffle low carb leaves room to top with your personal favorites!

Here are some options: fresh fruit, sugar-free or natural maple syrup, nut butters, greek yogurt, butter, or anything you fancy that will fit in your macros! The one in the picture is topped with blueberries & a sugar-free, locally made blackberry syrup!

However you create your delicious waffle, make sure to create a recipe in your MFP app to get the right numbers!

And now for the most important part: What are your favorite waffle toppings?
